    Default Roast Turkey in a brine solution.....

    Try this recipe at least once. You will not regret it. Everybody that I get to try this, agrees this is their favorite way. Your turkey will come out so moist.


    Good Eats Roast Turkey Recipe courtesy Alton Brown


    1 (14 to 16 pound) frozen young turkey
    For the brine:
    1 cup kosher salt
    1/2 cup light brown sugar
    1 gallon vegetable stock
    1 tablespoon black peppercorns
    1/2 tablespoon allspice berries
    1/2 tablespoon candied ginger
    1 gallon iced water
    For the aromatics:
    1 red apple, sliced
    1/2 onion, sliced
    1 cinnamon stick
    1 cup water
    4 sprigs rosemary
    6 leaves sage
    Canola oil
    Combine all brine ingredients, except ice water, in a stockpot, and bring to a boil. Stir to dissolve solids, then remove from heat, cool to room temperature, and refrigerate until thoroughly chilled.
    Early on the day of cooking, (or late the night before) combine the brine and ice water in a clean 5-gallon bucket. Place thawed turkey breast side down in brine, cover, and refrigerate or set in cool area (like a basement) for 6 hours. Turn turkey over once, half way through brining.
    A few minutes before roasting, heat oven to 500 degrees. Combine the apple, onion, cinnamon stick, and cup of water in a microwave safe dish and microwave on high for 5 minutes.
    Remove bird from brine and rinse inside and out with cold water. Discard brine.
    Place bird on roasting rack inside wide, low pan and pat dry with paper towels. Add steeped aromatics to cavity along with rosemary and sage. Tuck back wings and coat whole bird liberally with canola (or other neutral) oil.
    Roast on lowest level of the oven at 500 degrees F. for 30 minutes. Remove from oven and cover breast with double layer of aluminum foil, insert probe thermometer into thickest part of the breast and return to oven, reducing temperature to 350 degrees F. Set thermometer alarm (if available) to 161 degrees. A 14 to 16 pound bird should require a total of 2 to 2 1/2 hours of roasting. Let turkey rest, loosely covered for 15 minutes before carving.

    Mouth is watering now. Only three days to go.

    My favorite is Deep Frying a turkey. I can't get my Family members to try it. They are worried about grease fire. I use a nice Peanut oil. and when done, I'll use the oil for homemade potato chips while the turckey rests for 30 minutes.

    REMEMBER... If you use the Turkey frying oil that comes in the large "box" containers...It's made of Lard/animal fat. It can catch on fire. I have not had that problem with Peanut oil.

    there is a new turkey out. It is for inside deep frying. It is cool to the touch & insalated. It is run on electric like a commercial fryers. It is pretty nice & safe ( as long as you can read ). I have not seen anyplace to buy it yet...

    The fire-thing is what has kept me from trying a turkey fryer. Everyone I know who does it this way says it's the best.

    I've seen Alton Brown's episode on the brine turkey...it's a classic.

    By the way, John, a great substitute for the bucket is a Coleman-style cooler (one obviously larger enough for the bird and the brine.) Keeps the brining solution colder too so you can start the process earlier in the day too.

    They sell bags in the supermarket for this purpose also. I am using a 5-Gal bucket from the diner that is already certified Food-Safe. The hard plastic material is easily sanitized with a bleach solution, I imagine the same would hold true for the cooler. Unless of course, it's styrofoam.

    when I worked for a butcher in the 50's and 60's we used stone crocks when we made kosher dill pickles and corned beef.

    We put the turkey and brine into a double layer of garbage bags and then place that into the cooler.

    Remember this is very important:

    "Roast on lowest level of the oven at 500 degrees F. for 30 minutes. Remove from oven and cover breast with double layer of aluminum foil,"


    Dark meat and white meat are finished at different temperatures. So it is important to put the double layer of aluminum foil over the breast portion of the the turkey. Pre-molding the aluminum before putting the turkey in for the first time will help things go smoothly.

    WOW! That was the best turkey I ever made!!! Luckily for me, I can make really fabulous gravy... which is a good thing, because in years past, I needed a good gravy to cover up a bad turkey. Not this year, for the first time ever, the turkey itself was mouthwatering. I think I will be brining from now on!!!

    I had 3 little pieces of turkey left that I put in a sandwich baggie..that's it..everybody loved it. Only bad thing, I have to make another just to have 'leftovers'!!!

    Even though no one has posted in this thread in 4 years this recipe is still discussed in the ShoutBox every year!!

    Well I was just wondering who was going to brine their turkey this year and is anyone doing it for the first time??

    If I ever have an oven that works properly again I'd love to try this!!
