Good question; I don't think that deep gameplay in of itself makes some games popular over others because some of the more "simple" machines have been wildly popular. In the end, it's really how well the machine wins and how familiar it is but depth can also come from understanding the big picture of which kinds of patterns win and which don't.
It's kind of interesting but when I was a heavy player, I could play a machine for just a few minutes and could imagine if the game would become popular or now. This is not because I'm a genius (though some may think so...) but it comes from knowing what players like and what they don't like. I've played machines that are almost too deep; so much so that they are too confusing and/or not worth the bother of understanding.
