    Well i am imported here... I grew Up in Canada (British columbia)

    actually They used to have a few wendy's in the Athens area but the shut them all down.. and left..
    the only international junkfood we have now is

    Low End

    Pizza Hut
    Mcdonalds
    Kentucky fried
    i dont think i am missing any.

    High end

    Hard Rock Cafe
    T.G.I.Fridays

    fast food american style doesnt do well over here as we have the hometown hero.. the SOUVLAKI and GYRO.... souvlaki shacks are all over the place in the hundreds... Mcdonalds for instance only works well in the areas that either have High tourist Traffic..( you know the people that go on vacation and are afraid to eat anything local/different) and in areas where there is a High expatriot community.

    as for as the local SOuvlaki street food goes it cant be beat... healthier too as the stuff used to make them actually comes from real animals and vegetables not the stuff that the Big fast food chains pass on to us as 100% real beef.. etc etc..

    oh and trust me when i say if you have had souvlaki at a Greek restaurant outside of Greece you are only getting like 10% of what it really tastes like etc...

    hmmm.. I'm hungry now..

    Ok, here's my favorite recipe:

    10lbs 2L 2 row barley malt
    1lb 60L crystal malt barley
    1/4 oz. Galena hops
    1oz. Liberty hops
    1 tbls Irish Moss
    1 packet brewers yeast

    SANITIZE EVERYTHING you will be using, pots, spoons, fermenters etc.

    1) In a large pot put the grain in with 2 gals water and heat to 170 deg F.
    2) Let set for 1 hr at 155+ deg to convert starches into fermentable sugars
    3) Tranfer the mash to a luder tun and sparge with about 1 gal of water. Keep running the wert back through the tun until it runs clear.
    4) Transfer the clear sweet wert to the brew pot and bring to a boil. watch it, it will crack like making candy, you don't want it to boil over....believe me.
    5) When you have a good boil going add the galena hops...again, it will raise up some...
    6) After 45 minutes of a good boil add the liberty hops and during the last 10 minutes (60 minutes total boil time) add the Irish Moss
    7) Very carefully transfer tp the primary fermenter, add enough water to bring up to 5 1/2 gals total.
    8) Chill to below 90 deg and pitch in the yeast, the specific gravity should be around 1.060 at this point. let sit for a few minutes then stir well, seal the top and install air lock. Let sit for 5-7 days until the fermentation slows down.
    9) Rack the beer into the secondary GLASS carboy and let ferment another 7+ days.
    10) When the S.G. is around 1.010+/- it's bottling time. (about 6% alcohol)
    11) Sanitize 48 12 oz amber bottles and add about 1 tsp sugar to each. Fill the bottles to about 1 1/2 inch from top and cap.
    12) Let the 2 cases of freshly bottled ale sit in a dark place at around 72 degs for 2 weeks or more. The temptation will be hard.......
    13) reward yourself with the finest brew around...........you may have to buy it at the store if you screwed up with the above steps.....
    P.S. Have your wife clean up the mess....after all, she's going to help drink it!!!!

    Sure,

    Souvlaki abroad (by this i mean outside Greece) is usually skewered meat chunks served with a side of rice or potatos.

    Souvlaki here in Greece. on the other hand comes in 3 varieties

    1) Plain souvlaki is marinated pork chunks made over a charcoal grill served with a piece of Bread this is for the quick on your feet meal that isnt too messy. these souvlakis are small so you need about 3 -5 plus an order of fries to call it a meal

    2) same as above but instead of being served on a stick with a piece of bread the meat is served inside pita bread that is then filled with tomatos, chopped onion, a bit of parsley (cilantro not the french puffy parsley) some places also add a few french fries to the inside of the pita and it is topped off with a spoonfull of Tzatziki and a dash of Parika on top. Tzatziki is a sauce that is made from yogurt cucumber and garlic.. it is WOW.. i cant get enough of the stuff i eat it with a spoon whenever i make it at home... though i cant meet people afterwards... due to the.. Garlic aftermath,, hehehehe

    3) the third type of Souvlaki is the Gyro variety.. gyro is not meat chunks on a stick. (gyro comes from the greek work to go around.) gyro is a made on a machine that has a metal spike so to speak that you skewer big pieces of pork on to. this meat then goes around and around cooking slowly all the drippings from the top make their way to the entire length of the meat going around. when the outside is cooked the meat is shaved off and the thing keeps spinning and spinning and cooking I'll try to find a picture of this as i dont think i am explaining it very well.. anyway this meat that is cut off is then put in a pita and filled again as per #2...

    Its yummy stuff...

    Souvlaki is traditionally PORK. though nowadays some places offer Chicken Souvkaki and Chicken Gyro but chicken tends to be drier.....

    Your making me hungry sid. I love greek food. In a town I use to live in here in Minnesota has a greek festival evey year and I would go to get my fill of souvlaki and gyros. We also have a few good greek resturants around and your right about that sauce, it's great.

    My inlaws are all Greek so I get the food once in a blue moon. I wish we had it on every street corner. Good stuff.

    Now that sauce... that stuff is icky. I DETEST white creamy crap (unless, of course, it's sweet).

    Made from thick, rich sheep’s milk yoghurt, this tangy sauce is part of the meze table in every Greek tavern. For a similar consistency with cow’s milk yoghurt, you must first drain it of excess water. The sauce is delicious served with fried eggplant and zucchini, lamb chops or meatballs, or as a dip for pita bread.
    Total preparation time15 minutes
    Quantity this recipe will make10 servings or more
    List of Ingredients
    Preparation Instructions
    1. 2 medium size cucumbers
    2. 400g strained yoghurt
    3. 4 garlic cloves
    4. 2 tbsp. olive oil
    5. 2 tbsp. wine vinegar
    6. a little salt
    7. fresh chopped fennel
    Peel cucumbers and grate each one length-wise with course grater. Salt, allow to drain and press out excess liquid from grated cucumbers.
    Peel garlic cloves, remove sprout if it exists and crush them.
    Mix cucumber, garlic, vinegar and salt.
    Fold the yoghurt and the olive oil into the mixture.
    Add the chopped fennel to garnish.
    Serving instructions
    You may use fresh chopped mint or fresh chopped dill, instead of fennel.

    well Musky you have found yourself a very good recipe.
    i dont think i can improve on it..

    the only things i can say

    1) this Dip is best if it sits a few hours in the fridge so the flavours can all blend well together 4 cloves of garlic may be a bit excessive especially if it sits.(unless you dont mind not being around people for a day or so) the longer it sits the more potent the garlic becomes.. Tzatziki will keep in the fridge for about 4 days.. or until the Pita Bread runs out

    2)draining the Cucumbers is the most important part. take extra care with this step because if you dont it becomes watery . i grate the cucumber salt and allow to drain then i put it in a clean dish cloth and squeeze the living cucumber juice right out of it.. do this a few times to get as much juice out as possible.
    it is common here to also bit carrot in as well (again grated and drained)

    in Greece the most common herb added is either dill or Mint.. but in very small doses, as putting too much will give you a minty or dilly taste.

    anyway.. Kali Oreksi (good appetite in Greek)
