    Of course Everyone here knows that I LOVE me a Chicken Fried Steak with a Baked Potato, Salad,Veggies,and a good old Fashioned Lemonade.

    I should probably figure out where to take a thread like this since it is really a food thread meanwhile Chicken Ten Eyck

    Chicken Ten Eyck
    Ingredients:
    6 large boneless Chicken breasts
    ¾ cup crab meat
    ¾ cup rice
    ½ cup Wild rice
    2 tbsp. sage
    ½ tsp celery salt
    1 Tbsps. Parsley
    ½ tsp onion powder
    ½ tsp white pepper
    1 tsp rosemary
    1 cup of fresh button mushrooms, or thickly sliced fresh mushrooms
    ½ stick of butter
    ½ cup flour
    2 cups cream
    2 cups grated medium cheddar cheese
    1/3 cup grated Parmesan
    Combine white and wild rice with 2 ½ cups water and bring to a boil. Stir in Sage, celery salt, parsley, onion powder, white pepper and rosemary then cover and simmer until rice absorbs the water.
    When rice is cool enough to handle add crab meat and mix into rice carefully. Place enough of the rice stuffing liberally enough on chicken breasts that they are well filled when the breasts are folded over the stuffing loosely. Place the breasts in a baking dish with the folded ends on the bottom and bake them at 375 degrees or broil on low flame the chicken until it is cooked.
    While they a baking melt the butter and stir in flour until the mixture is smooth. Add cream and continue to heat while stirring with a wisk until the mixture begins to thicken. Stir in the grated cheddar and continue heating and stirring until the mixture is smooth.
    When the chicken breasts have been baked, remove any grease from baking dish. Spread uncooked fresh mushrooms over and around the breasts and pour cheddar sauce over all. Sprinkle fresh Parmesan over the cheese sauce and return to oven to bake 20 minutes at 375 degrees before turning on broiler long enough to brown the top of the cheese sauce.
    Overtime you will adjust spices in stuffing and sauce thickness to your taste but this a good safe starting spot.

    actually I meant the moving the book-within thing to the better spot. I've got chicken Ten EYck (my invention) pictures if I can find them in the jungle that is my computer.

    There is definitely a cheese thread in my historical novel "Carbunkle Wine" not so much in "Dead Roses" or the other stuff I am building. New England Cheese wants to feature Chicken Ten Eyck as soon as I find the pictures and send them.
