    Post Huevos Rancheros

    Per Sid's request, an e-a-s-y recipe for huevos rancheros.

    I made these this morning for the kids. They all love them and they're easy. My oldest son helped.

    Ingredients:

    One large onion
    Bell pepper
    Fresh cilantro, chopped
    Grated cheese
    Eggs
    Canned salsa
    Corn tortillas
    Cooking oil
    Refried beans

    I wing this, so sorry no measurements. Heat the salsa in a saucepan until hot and set aside covered (two seven ounce cans worked well for 6 of us. Don't be afraid to get the hot variety, it's actually quite mild, maybe the cooking tempers it.) Chop the onion and the bell pepper and cook for just a couple of minutes in a pan with a little bit of oil. Set aside. Heat a 1/4" layer of oil in a frying pan until it spits when sprinkled with water. Heat and grease a griddle for the eggs. Fry your eggs to your preference (I'm lucky, everyone likes it the same here, over-easy) At the same time your eggs are going, drop two tortillas into the oil and flip after about 7 seconds. Take them out and allow them to drain a little before placing them on a plate. Put some onions and peppers on the tortillas and then the eggs. Spoon some of the heated salsa over the eggs, sprinkle with cheese and cilantro, and serve with refried beans.

    I'm not sure what the traditional recipes call for, I kinda made this up on a camping trip one year out of what we had at camp. It was a hit. I normally dislike canned or bottled salsas, but the canned stuff really works here. Go for the Mexican stuff, not the American "Pace" or other brands. You'll find it in the ethnic foods section.

    I'm a huge fan of cast iron, I rarely cook on anything else. We even have the fajita pans the kids eat off of. Really easy cleanup and it adds iron to your meal!
