    What to do on those cold winter days? Bake cookies

    Here's my 'Big Bear' recipe for soft chocolate chip walnut cookies.

    This recipe will make approx 6 dozen cookies.

    Ingredients:

    4 1/2 cups all purpose flour
    2 teaspoons baking soda
    2 cups butter, softened
    1 1/2 cups brown sugar (packed)
    1/2 regular sugar
    4 eggs
    2 teaspoons vanilla extract
    4 cups semisweet chocolate chips
    2 cups chopped walnuts (optional, in case you are allergic)

    Secret ingredient:
    2 packages instant vanilla pudding mix (3.4 oz packs)
    (makes cookies soft)
    You can also use chocolate pudding mix, if you want more chocolate flavor.


    Optional ingrdients: (for those who like to experiment )

    Cinnamon
    Nutmeg
    Rum Tequila, vodka, whatever you like (wait a minute, I'm making cookies, not eggnog)



    1. Preheat oven to 350, mix flour and baking soda, set aside.

    2. In large bowl, Mix softened butter with brown and white sugars, (be sure butter is well softened )
    Beat in the instant pudding mix until blended.
    Stir in eggs and vanilla, then blend in the flour and baking soda mix.

    3.Lastly, mix in chocolate chip and walnuts.

    4. Bake 10-12 minutes until edges are browned.
    (start at 10 minutes and check to see if cooked enough, sometimes it will take a little longer depending on the size of your cookies)


    Enjoy chocolate chip cookies "BigBearSteve" style, and don't forget the tall glass of milk.

    What a great idea for a thread!

    I thought I would add my holiday favorite - Pumpkin Pie!! My wife's family is from England and has had this recipe in their family for generations. When made correctly, the pie fluffs up like a souffle and melts in your mouth!!

    We have tried substituting the ingredients to make the pie more healthy, but it never seems to turn out right. So I recommend making it as the recipe dictates and enjoy!


    Olde English Pumpkin Pie

    Ingredients:
    1 1/2 cups Canned Solid Pack Pumpkin
    1 can Eagle brand Sweetened Condensed Milk
    3/4 cup Light Brown Sugar
    1/2 tsp Salt
    1/2 tsp Ground Ginger
    1 tsp Cinnamon
    1/4 tsp Nutmeg
    1 tsp Lemon Extract
    2 tsp Butter (the real kind)
    2 Egg Yolks
    1 Egg White (stiffly beaten)
    1 9" deep-dish piecrust

    Directions:

    In a saucepan combine pumpkin, milk, sugar, salt, butter, and spices. Mix well and heat until butter has melted. Add egg yolks to mixture and blend well. Add lemon extract and blend in. Gently fold in stiffly beaten egg whites and let mixture cool. Pour into piecrust and bake at 500 degrees for 8 minutes. Reduce heat to 325 degrees and bake for an additional 25-30 minutes. Let pie cool for one hour before serving.

    Baking hint:
    To prevent edges of piecrust from burning, take a square of aluminum foil and cut an 8" or 9" hole in the center. Lay over top of pie, exposing pie mixture but covering the edges of the crust. Bake pie according to directions above.

    This one worked out real well:
    make a red Velvet cake . break it up . Put in a zip lock bag and freeze for a few hours. take it out and defrost. then squish them together into little balls. freeze again. In the meantime melt chocolate in a pan. take the balls and dip in the chocolate. sprinkle with sprinkles and let harden.
    I made them for my Christmas party but they never made it that far ... the kids enjoyed them

    I've been wanting to try something similar to that Relda... I was just talking with my girls about it today... only I was going to use a Sara Lee Pound Cake and vanilla frosting and put the balls onto lollipop sticks before the freezer. Maybe tomorrow.

    In the meantime, here is one of my favorites... I get lots of requests for it during the holidays. (My recipe is very close to this one, I just thought this would be better to share for the detailed instructions.) Even if you don't like pumpkin... I am almost certain you will LOVE this!

    Bacon Candy! The ONLY recipe you'll ever need!!!

    Here’s what you need:
    – 1 pound of bacon
    – Light brown sugar
    – One ziplock plastic bag

    Step 1: Cut the bacon into strips approximately 1″ wide.

    Step 2: Fill the ziplock bag with brown sugar and throw the bacon pieces inside. Do not throw more than 3 or 4 pieces at a time.

    Step 3: Shake bacon pieces inside bag so that the piece is coated with brown sugar.

    Step 4: Line the pan with these sugar coated pieces of porkly goodness.

    Step 5: Put the pan in a pre-heated oven set to 350 degrees. Bake for approximately 15 minutes or until they pieces are crispy.

    Let cool and Enjoy!

    Jose Cuervo Christmas Cookies!!

    1 cup butter
    1 cup brown sugar
    1 cup sugar
    4 large eggs
    1 tsp baking soda
    1 tsp salt
    1 cup nuts
    2 cups dried fruit
    1 bottle Jose Cuervo Tequila

    Take a sample sip of the Cuervo to check quality.

    Take a large mixing bowl. To check the Cuervo and ensure it is of the highest quality, pour one level cup and drink.

    Turn on the electric mixer. Beat one cup of butter in a large fluffy bowl.

    Add one peastoon of sugar. Beat again. At this point it's best to make sure the Cuervo is still OK, try another cup. just in case.

    Turn off the mixerer.

    Break 2 leggs and add to the bowl and chuck in the cup of dried fruit.

    0A, Pick the frigging fruit off the floor.

    Mix on the turner.

    If the fried druit gets stuck in the beaters, just pry it loose with a drewscriver.

    Sample the Cuervo to check for tonsisticity.

    Next, sift two cups of salt, or something. Who geeves a sheet. Check the Jose Cuervo. Now shift the lemon juice and strain your nuts.

    Add one table.

    Add a spoon of sugar or whatever you can find.

    Greash the oven.

    Turn the cake tin 360 degrees and try not to fall over.

    Don't forget to beat off the turner.

    Finally, throw the bowl through the window, finish the Cose Juervo and make sure to put the stove in the wishdasher.

    Per a member request, I am posting a cake pop recipe. These are fun to make and my kids think they taste fabulous! I think they are a bit sweet, but if you have a sweet tooth, these are for you.     I cheated and used a Sara Lee Pound Cake for my pops, but you can bake any type of cake that you like and let it cool completely.

    In a large bowl, crumble your cooled cake with yours hands or you can use a food processor. To make it easy, you can use ready made frosting or your own recipe. Add a large dollop of frosting to the crumbled cake and mix it up. You want the mixture to get to the point where you can roll it up similar to a meatball. The frosting is the 'glue'. If you need more frosting, add it, but you don't want the mixture to be too loose or it will not hold its shape. Place your tray of cake balls into the fridge or freezer to firm up.

    Melt chocolate or candy melts by way of a double boiler or the microwave. Be careful to not get even one drop of water in the candy or it will seize up and be useless. When the chocolate is melted, take a lollipop stick and dip the end into the melted candy and then push it into one of the cake balls, about 1/3 to 1/2 way through the ball. At this point, you want to allow the candy to harden just a minute and hopefully, that will firm it onto the stick. Now, holding the stick, swirl the pop in the melted candy so that it is covered and gently tap off any excess chocolate on the side of the bowl or tap it with a spoon. When no more chocolate is dripping, poke your pop into a piece of styrofoam to keep it upright while it dries. At this point, decorate as you like with sprinkles or candy to suit your preferences.

    The Bakerella site has LOTS of fun ideas for these and also tips for making the process go smoothly. I am proud of my pops... but after you see hers, you will see a big difference ... still, I am pleased with my first effort.

    It's holiday time again

    Time to post up your favorite recipes once more.

    When I was a kid, during the holidays our local bank had gingerbread cake and Wassail for the customers.

    Wassail is a warmed citrus based drink, that will fill the air with the smell of cinnamon and cloves.

    4 cups Pineapple juice

    12 oz Apircot nectar

    4 cups Apple cider

    1 cup Orange juice

    6 Cinnamon sticks

    1 Tbs whole cloves

    (optional) 1 whole orange sliced

    Mix in large pot and heat, I like to let it simmer for about 20 minutes so the amora fills the house

    You can change the various juices to suit your taste, some recipes add lemon juice and others.

    I think guave juice would add a unique flavor too.

    Don't forget to strain out the cloves before serving (cinnamon sticks can be used for straws)
