    Default The Recipes...

Most of us have seen the following announcement:

You are a member of a new nation, Pachination

The concept of PachiTalk was to bring together anyone and everyone who has a passion for these amazing Japanese creations. Once you stepped through the doors at PachiTalk.com, you become part of the Pachination.
You are no longer Japanese, American, English, Italian, German, etc. (If I missed you I am sorry). You are now considered a Pachinational, put that on an application! We are all one big entity among ourselves and our Pachis. Segregation is not our philosophy and the separating of different cultures will not happen, we are one, under the Pachi Flag.

We are the United Nations of Pachiland...

We come from all over the globe. And while we are one nation here, we comprise a vast array of cultures. And that is what I am hoping to celebrate with this thread, our individual cultures through our taste buds.

So... Post those recipes for us all to try!!

    Turkey:

Turkey was important food source for Indians and colonist in the new world. And while it has be slow to take off in other parts of the world, it remains my favorite meat.

There is nothing better than a moist piece of turkey cooked right. But, it is often taking for granted when cooked. And too many people have become accustomed to eating it dry on Thanksgiving Day. The secret to cooking turkey is to brine it before hand. It doesn't matter which method you choose to cook it; deep frying, roasting or rotisery. The first step should always be to brine.

I have posted this recipe every Thanksgiving since I have been here.

Roast Turkey in a brine solution...
Try this recipe at least once. You will not regret it. Everybody that I get to try this, agrees this is their favorite way. Your turkey will come out so moist.

Good Eats Roast Turkey Recipe courtesy Alton Brown

1 (14 to 16 pound) frozen young turkey
    For the brine:
    1 cup kosher salt
    1/2 cup light brown sugar
    1 gallon vegetable stock
    1 tablespoon black peppercorns
    1/2 tablespoon allspice berries
    1/2 tablespoon candied ginger
    1 gallon iced water
    For the aromatics:
    1 red apple, sliced
    1/2 onion, sliced
    1 cinnamon stick
    1 cup water
    4 sprigs rosemary
    6 leaves sage
    Canola oil
Combine all brine ingredients, except ice water, in a stockpot, and bring to a boil. Stir to dissolve solids, then remove from heat, cool to room temperature, and refrigerate until thoroughly chilled.
Early on the day of cooking, (or late the night before) combine the brine and ice water in a clean 5-gallon bucket. Place thawed turkey breast side down in brine, cover, and refrigerate or set in cool area (like a basement) for 6 hours. Turn turkey over once, half way through brining.
A few minutes before roasting, heat oven to 500 degrees. Combine the apple, onion, cinnamon stick, and cup of water in a microwave safe dish and microwave on high for 5 minutes.
Remove bird from brine and rinse inside and out with cold water. Discard brine.
Place bird on roasting rack inside wide, low pan and pat dry with paper towels. Add steeped aromatics to cavity along with rosemary and sage. Tuck back wings and coat whole bird liberally with canola (or other neutral) oil.
Roast on lowest level of the oven at 500 degrees F. for 30 minutes. Remove from oven and cover breast with double layer of aluminum foil, insert probe thermometer into thickest part of the breast and return to oven, reducing temperature to 350 degrees F. Set thermometer alarm (if available) to 161 degrees. A 14 to 16 pound bird should require a total of 2 to 2 1/2 hours of roasting. Let turkey rest, loosely covered for 15 minutes before carving.

    Episode#: EASP01

You can check Alton Brown out on the foodnetwork.com and the foodnetwork channel. He is well worth watching. And I have learned a lot from him.

    peek a boo eggs

take a slice of bread and make a 1 1/2 inch hole in the middle, butter both sides and place in frying pan. when one side browns a little flip it over and crack open an egg and place the yolk in the hole with the white on the bread..
salt and pepper to your taste.
after a min or longer flip the whole thing over and fry it on the other side.

i like mine easy over with the yolk runny so i can soak it up with the bread

    Buffalo Balls!

Just like the chicken wings. This is the "original recipie from Buffalo NY, at least that is what I was told.

One stick of butter, place it into a slow cooker pour one bottle of Frank's Red Hot. Dump in a bag of frozen meatballs. plug it in ...stir...wait ...stir...enjoy!

If you take this to a party, you have to let them know it is hot, so I always make a nice big sign that says "Buffalo Balls!" Everyone always laughs at me and I dont know why.

    Ramen spagetti

bake italian sausage in oven at 350 degrees for an hour

bring pot of water to a boil and add 2 packages of ramen noodles, cook for 3 mins.

save the seasoning to add to something else another day

heat up or make from scratch spagitti sause.

cut up sausage, drain noodles and put both in a large bowl, then add your italian sause over everything

    it makes a great meal
